Hawaiian fruit ring

Ingredients

1 | cup | Diced oranges (about 3) |
½ | cup | Sugar |
1 | cup | Orange juice and water |
1 | pack | (3-oz) orange gelatin |
1 | cup | Hot water |
1 | tablespoon | Grated orange rind |
3 | tablespoons | Chopped maraschino cherries |
1 | cup | Pineapple tidbits; drained, cut in half |
Directions
Comi=bine orange and sugar. Let stand 10 minutes. Drain and add water to make 1 cup. Dissolve gelatin in hot water. Add orange juice, water and orange rind. Chill until slightly thickened and fold in fruits. Pour into 1-½ quart mold or individual molds. Garnish with sweetened whippen cream, coconut, cut cherries and mint leaves, if desired.
