1½ | cup | Plus 2 tbsp all purpose flour |
2 | teaspoons | Baking soda |
2 | teaspoons | Baking powder |
1 | teaspoon | Cinnamon |
1 | teaspoon | Nutmeg; freshly grated |
½ | teaspoon | Cloves |
½ | teaspoon | Allspice |
½ | teaspoon | Ginger |
½ | cup | (1 stick) unsalted butter; cut into pieces, room temperature |
1 | teaspoon | Orange peel; grated |
½ | cup | Sugar |
⅓ | cup | English golden syrup -OR- |
⅓ | cup | Light molasses |
1 | cup | Unskinned almonds; coarsely chopped |
Directions
Sift together flour, soda, baking powder, cinnamon, nutmeg, cloves, allspice, and ginger. Transfer to processor. Add butter and orange peel and blend using on/off turns until mixture resembles coarse meal. Mix in sugar. Add syrup and ½ cup chopped almonds and mix using on/off turns until dough just gathers into balls.
Preheat oven to 400F. Line 2 baking sheets with parchment paper.
Place remaining ½ cup almonds in small bowl. Working quickly to prevent oversoftening, roll dough into walnut-sized balls. Press one side of each ball into almonds, flattening slightly. Arrange on prepared baking sheet nut side up, spacing evenly. Bake until golden brown, 9 to 10 minutes. Cool 4 to 5 minutes. Transfer to rack using spatula. Cool completely before serving. Store in airtight container.
