Holiday mint pie

Ingredients

1 | cup | Crushed Keebler Grasshopper Fudge Mint Cookies; (16-18) |
3 | tablespoons | Hot water |
1 | 6-oz graham cracker; (or chocolate) pie crust | |
1 | pack | (3 oz) cream cheese |
⅓ | cup | Sugar |
¼ | teaspoon | Peppermint extract |
1 | Container; (8 oz) Cool Whip, thawed | |
6 | drops | Green food coloring; (up to 10) |
Directions
Mix cookies and hot water. Spoon into crust and gently spread to cover bottom. Beat cream cheese until smooth, gradually beat in sugar, milk, and extract. Fold in whipped topping. Add food coloring. Put dollops of mixture into crust. Smooth top with spatula.
I used a chocolate crust and left out the food coloring. It was a popular pie.
