Iced soup of berries

2 | pounds | Selection of summer berries |
100 | millilitres | Champagne; (sparkling wine will |

Mint leaves to garnish | ||
100 | millilitres | Red wine |
Directions
Bring to the boil the sweet wine, red wine, caster sugar, lemon juice and vanilla pod.
Add the berries and refrigerate for 24 hours.
To serve, splash on the champagne and garnish with mint.
