Jacques pepin vegetable gratin+

1½ | cup | Cherry tomatoes (mixed colors if you can get them) |
Zucchini | ||

Fresh herb of your choice | ||
Freshly cracked black pepper | ||
2 | tablespoons | Parsley, minced |
3 | tablespoons | Parmesan, grated |
Eggplant | ||
Leeks | ||
Or what have you? | ||
3 | tablespoons | E.V. olive oil |
Directions

IN ADDITION
Toss all in a bowl and put into a gratin dish of accomodating size.
Bake in a 350 degree oven till cooked and somewhat browned on top.
We have had this dish and it is lovely. We must try it again, soon.
