Jacques pepin vegetable gratin+

Ingredients

cup Day old hearty bread cubes
cup Cherry tomatoes (mixed colors if you can get them)
Zucchini
Sweet bell pepper
Scallions
Fresh herb of your choice
Freshly cracked black pepper
2 tablespoons Parsley, minced
3 tablespoons Parmesan, grated
Eggplant
Leeks
Or what have you?
3 tablespoons E.V. olive oil

Directions

OPTIONAL

IN ADDITION

Toss all in a bowl and put into a gratin dish of accomodating size.

Bake in a 350 degree oven till cooked and somewhat browned on top.

We have had this dish and it is lovely. We must try it again, soon.
