Jane's pumpkin cookies

Ingredients

3 | cups | Sugar |
3 | Eggs | |
4 | cups | Pumpkin |
3 | teaspoons | Vanilla |
5½ | cup | Flour |
1 | teaspoon | Salt |
3 | teaspoons | Baking powder |
3 | teaspoons | Baking soda |
3 | teaspoons | Cinnamon |
Directions
Cream shortening, sugar and egg together; stir in pumpkin and vanilla. Sift dry ingredients together and stir into shortening mixutre. Preheat oven to 350 oF. Drop by teaspoonfuls onto ungreased baking sheet and bake 12 - 15 minutes. Makes 6 - 8 dozen cookies.
Variations; add chopped nuts, or chocolate chips. Frost with cream cheese frosting.
