Jellied vegetables in tomatoes cases

Ingredients

1 | tablespoon | Gelatin; |
¼ | cup | Cold water; |
¼ | cup | Mild vinegar; |
1 | cup | Boiling water; |
1 | tablespoon | Lemon juice; |
¼ | cup | Sugar; or sugar sub!!! |
½ | teaspoon | Salt; |
1½ | cup | Vegetables; |
Directions
Directions Hollow out six firm, red medium - sized tomatoes, and place in refrigerator to chill. Soak gelatine in cold water, and dissolve in boiling water. Add vinegar, lemon juice, sugar and salt, and chill. When mixture begins to thicken add a cup and a half of any left - over vegetables, cut in small cubes, and fill tomato cases. Replace in refrigerator until firm.
Serve on a bed of lettuce.
