Kaneohe banana fritters

Ingredients

1 cup Flour
2 teaspoons Baking powder
1 tablespoon Sugar
1 Egg, separated
¼ Lemon juice
¾ cup Milk
Bananas, halved or cut into
Diagonal pieces

Directions

Sift together flour, baking powder and sugar. Combine egg yolk and lemon juice (recipe does not stipulate amount, but I would assume it was ¼ cup) and add to dry ingredients. Add milk slowly. Beat egg white. Fold in last. Dip bananas in batter and fry in deep fat.

Serve hot.
