Kirghiz baked beef

Ingredients

Quantity Ingredient
2 pounds Flank steak, Chopped 1/2\"
1 each Lg. Onion, Chopped
1 each Med. Green Pepper, Chopped
2 tablespoons Olive oil
1 cup Yogurt (Plain)
2 eaches Large Eggs
2 eaches Apples Diced
1 cup Chopped Dried Apricots
½ cup Raisins
½ cup Prunes dried, pitted & chopped
2 tablespoons Curry Powder
1 teaspoon Salt
2 teaspoons Pepper

Directions

Sautee onion & green pepper in olive oil in lg. heavy skillet until onion is transparent. Add chopped beef and brown lightly. Pour off drippings. Add eggs, apple, apricots, curry powder, salt and pepper to beef. Add yogurt & mix well. Place in a large, deep casserole & bake in a 350 degree F. for 45 minutes.
