Ingredients

Quantity Ingredient
4 eaches Apples, medium, peeled cored finely chopped
6 tablespoons Lemon juice fresh
2 tablespoons Lemon rind grated
½ cup Sugar
2 eaches Eggs beatne lightly
cup Fine berad crumbs

Directions

Pour lemon juice over the apples then squeezed them dry. Mix the lemon rind into the apples, sugar, egg, & bread crumbs. Chil in refrigerator for 30 minutes. remove from refrigerator and make walnut-sized balls. In a large pot of lightly, salted, boiling water drop the balls. Boil until they rise to the surface. Use a slotted spoon to remove them from the boiling water. Allow them to drain and cool to room temperature. These dumplings may be eaten dusted with powdered sugar, added to a fruit soup, or "as-is" as you desire.
