Kletski - apple dumplings

Ingredients

4 | Apples, medium, peeled cored finely chopped | |
6 | tablespoons | Lemon juice fresh |
2 | tablespoons | Lemon rind grated |
½ | cup | Sugar |
2 | Eggs beaten lightly | |
1½ | cup | Fine bread crumbs |
Directions
Pour lemon juice over the apples then squeezed them dry. Mix the lemon rind into the apples, sugar, egg, & bread crumbs. Chill in refrigerator for 30 minutes. remove from refrigerator and make walnut-sized balls. In a large pot of lightly, salted, boiling water drop the balls. Boil until they rise to the surface. Use a slotted spoon to remove them from the boiling water. Allow them to drain and cool to room temperature. These dumplings may be eaten dusted with powdered sugar, added to a fruit soup, or "as-is" as you desire.
