2¼ | cup | Sifted flour |
1 | tablespoon | Ground cinnamon |
1½ | teaspoon | Ground cloves |
1½ | teaspoon | Ground nutmeg |
⅛ | teaspoon | Salt |
1 | teaspoon | Baking soda |
½ | cup | Sugar |
½ | cup | Honey |
Grated rind of 1/2 lemon | ||
¼ | cup | Each chopped candied lemon and orange peels |
1 | cup | Slivered blanched almonds |
2 | tablespoons | Fresh orang juice |
Directions
Sift together the flour, spices, salt and baking soda. In saucepan, heat together the sugar and honey. To melted honey, add the lemon rind, candied lemon and orange peels, almonds and 2 tbsp fresh orange juice. Mix well and stir in the flour mixture. Knead on a lightly floured board until well blended. Roll out to ½ inch thickness, using as little flour as necesary. On cookie sheet that has a greased sheet of waxed paper, gently place rolled out rectangle of dough. Bake in a 325F oven for about 25 minutes or until golden brown. Using the edges of waxed paper that are hanging over, gently flip whole thing onto wire rack to cool, and peel off waxed paper while still warm. Turn right side up, frost or glaze when cool. Cut into diamonds and store in airtight container. Can be frozen. Makes about 5 dozen diamonds.
