Lemon and herb grilled trout

Ingredients

Quantity Ingredient
2 Fresh or frozen whole trout; gutted, defrosted
; if frozen
25 grams Butter; (1oz)
½ Lemon; grated rind and
; juice
1 tablespoon Freshly chopped flat leaf parsley and
; thyme
Salt and freshly ground black pepper
25 grams Flaked almonds; (1oz)
1 Sprig flat leaf parsley and watercress and
; lemon wedges to garnish

Directions

1. Make three slits on each side of the trout and place on a grill pan.

2. Mix together the butter, lemon rind, lemon juice, parsley and seasoning.

Dot half over the trout. Place under a preheated moderate grill for 12-15 minutes, turning the trout once and dotting with the remaining butter during cooking.

3. Sprinkle the almonds over the trout and return to the grill for 1-2 minutes until browned. Serve immediately garnished with parsley sprigs and lemon wedges.
