Lemony four-grain granola - country living

2 | cups | Old-fashioned rolled oats |
2 | cups | Puffed wheat cereal |
2 | cups | Puffed rice cereal |
2 | cups | Corn cereal squares |
1 | cup | Blanched whole almonds |
¼ | cup | (1/2 stick) butter or margarine |
¼ | cup | Vegetable oil |
½ | cup | Honey |
2 | teaspoons | Finely grated lemon rind |
¼ | cup | Lemon juice |
1 | cup | Dark seedless raisins |
Directions
1. Heat oven to 300'F. Line 15½-by 1O ½-inch jelly-roll pan with aluminum foil; lightly oil the foil or coat with nonstick vegetable cooking spray.
2. In large bowl, combine oats, wheat and rice cereals, corn squares, and almonds. In 1-quart saucepan, heat butter until melted. Stir in oil and honey; heat to boiling, stiffing constantly. Stir in lemon rind and juice until well mixed; pour over cereal mixture and toss until well combined.
3. Spread cereal mixture in prepared pan. Bake 30 to 35 minutes or until golden and dry, stirring every 10 minutes. Remove granola from oven and stir in raisins. Cool granola and store in airtight container. For a gift, package granota in a cellophane bag, if desired.
