Lettuce and onion soup

Ingredients

2 ounces Butter
1 large Onion, finely chopped
1 large Lettuce, shredded
2 pints Chicken stock
Salt and pepper
fluid ounce Double cream

Directions

Heat the butter in a saucepan, add the onion and fry gently until soft, being careful not to allow it to colour. Add the lettuce and cook in the butter for a few minutes, then add the stock and seasoning. Bring to the boil, cover and simmer for 5-7 minutes. Place half the mixture in a blender and puree. Turn into a bowl and repeat with the remaining mixture. Return to the saucepan. Bring to the boil, remove from the heat and gradually add the cream, stirring all the time. Serve with cheese straws.
