Ingredients

2 tablespoons Olive oil
¼ cup Chopped shallots
1 tablespoon Chopped garlic
1 cup Sliced zucchini (1 small)
1 cup Sliced yellow squash (1 med)
1 cup Bell pepper strips
1 can CONTADINA Pasta Ready Chunky Tomatoes with Crushed Red Peppers (14.5 oz)
1 can CONTADINA Tomato Paste (6oz)
¼ cup Dry white wine
½ teaspoon Salt (opt)
2 tablespoons Chopped fresh basil OR
1 teaspoon Dried basil, crushed
1 pack CONTADINA Refrigerated Linguine (9 oz)
Sliced ripe olives (opt)
Chopped fresh basil (opt)

Directions

In medium skillet, heat oil; saute shallots and garlic for 1 minute.

Add zucchini, yellow squash and bell pepper; saute for 3-4 minutes.

Stir in CONTADINA Pasta Ready Chunky Tomatoes, paste, wine and salt; simmer for 5-8 minutes or until vegetables are tender. Stir in basil; simmer for 1 minute. Prepare pasta according to package directions.

Pour sauce over pasta; garnish with olives and basil.
