Low-calorie blueberry pudding

Ingredients

Quantity Ingredient
1 Envelope unflavored gelatin
¼ cup Water
2 Eggs, separated
cup Sugar
¼ teaspoon Salt
1 cup Skim milk
1 teaspoon Vanilla
1 teaspoon Grated lemon rind
1 cup Fresh blueberries
2 tablespoons Sugar

Directions

Stir gelatin into water and set aside. Combine egg yolks, ⅓ cup sugar, salt and milk in saucepan. Cook and stir over low heat for 3 minutes. Add gelatin, vanilla and lemon rind. Cool until pudding begins to thicken. Fold in blueberries. Beat egg whites until stiff peaks form. Slowly beat in 2 tablespoons sugar. Fold into pudding.

Chill.
