Mackerel stew brittany style

Directions
Cover the bottom of a shallow saucepan with an inch of water. Add bay leaf, thyme, dehydrated onion flakes, garlic, salt and pepper. Simmer gently 3 to 5 minutes. Add mackerel pieces, cover saucepan and let simmer gently for 15 minutes. Add potatoes; cover and cook 10 minutes. Transfer fish and potatoes to serving platter and keep warm.
Quickly boil down sauce until reduced by half. Strain sauce over fish. Sprinkle with parsley or chives. Serve hot. *From Weight Watchers International Cookbook* Submitted By MICHELLE BRUCE On 01-31-95
