Mackerel genoa style

Ingredients

½ | cup | Olive oil |
1½ | pounds | Mackerel, cut into 2-inch |

2 | mediums | Onions, thinly sliced |
8 | Fresh clams, shelled | |
½ | teaspoon | Salt |
½ | teaspoon | Pepper |
1 | 8-ounce can tomatoes, drained | |
1 | tablespoon | Chopped parsley |
½ | cup | Dry white wine |
Directions
1. Preheat oven to 375F. 2. Place ¼ cup olive oil in shallow casserole dish; cover with half the fish. Top fish with half the onions, half the parsley, half the clams, and half the salt and pepper. 3. Repeat layers, using remaining fish, onions, parsley, clams, salt and pepper. 4. Cover casserole with tomatoes. Pour remaining oil and wine on top; bake for 40 minutes.
