Malaga gazpacho

Ingredients

3 mediums Ripe tomatoes; peeled and chopped
2 mediums Cucumbers; peeled, coarsl.chopd
½ cup Water
¼ cup Wine vinegar
½ Onion; chopped (opt.)
3 tablespoons Olive oil
1 Clove garlic; minced
Salt; to taste
3 slices White bread; cubed
Finely diced vegetables
Parsley; for garnish
Hard-boiled eggs, chopped; for garnish

Directions

Combine tomatoes, cucumbers, green pepper, water, vinegar, onion, olive oil, garlic and salt in batches in blender. Blend on Medium until smooth.

Increase speed to High. Add bread, a little at a time thought hole in top.

Stir down. Chill thoroughly. Garnish as desired. Can serve with parsley and egg garnish. We like to eat this with croutons.

NOTES : This recipe tastes like Gazpacho that we ate in Spain. Thickened with

bread.
