Mandarin muffins

1 | can | 11-oz. mandarin orange seg- ments |
1 | tablespoon | Orange extract |
2 | teaspoons | Baking soda |
½ | teaspoon | Salt |
¼ | cup | Sugar |
8 | ounces | Sour cream |
2 | cups | Flour |
2 | teaspoons | Baking powder |
½ | cup | Brown sugar |
1 | Egg | |
⅓ | cup | Shortening; melted |
Directions
Drain orange segments, reserving liquid. Cut segments into halves. Add orange extract to the reserved liquid and add to orange segments. Combine all dry ingredients in a lg. bowl. In a separate bowl, combine egg, sour cream, and melted shortening. Add to dry ingredients. Add oranges and juice, and mix just until moistened. Spoon into greased or paper-lined muffin tins, filling ⅔ full. Bake at 400~ for 20 to 25 mins.
