Mandarin orange cake (quick and easy)

Ingredients

Quantity Ingredient
1 pack Yellow cake mix
½ cup Veg. oil
4 Eggs
1 can (11 oz) Mandarin oranges (do NOT drain)
1 Cool (9 oz) Whip (brand of whipped topping)
1 can (20 oz) crushed pineapple (do NOT drain)
1 Box (3-3/4 oz) INSTANT Vanilla pudding
1 cup Flaked coconut

Directions

FROSTING

Mix ALL ingreds. together for 2 mins. on medium speed.

Pour into 3--9 inch round pans, that have been greased & lightly floured.

Bake at 325 degrees for 20 - 25 minutes. Remove to wire racks and COOL completely.

FROSTING: Blend pineapple, pudding & coconut. Fold in Cool Whip. Spread between layers & on top. Refrigerate. Garnish with extra oranges, coconut or pineapple pieces.
