Marbled apricot cheese

Ingredients

250 | grams | Dried apricots; (8oz) |
150 | millilitres | Unsweetened orange juice; (1/4 pint) |
1 | 200 gram jar fromage frais with apricots; (7oz) |
Directions
1. Soak the apricots with the orange juice for at least 4 hours, or preferably overnight.
2. Bring to the boil, then simmer for 15 minutes.
3. Pure the apricots in a liquidiser or food processor, and leave them to cool.
4. Put the fromage frais in a 1 pint (600ml) serving dish.
5. Spoon in the pure and blend in until marbled but not mixed thoroughly.
6. Serve chilled.

NOTES : Apricots are really versatile fruit. They blend well with both sweet and savoury ingredients, and besides this, have a high fibre content.
In this dish, the tartness of the puree blends well with the ''creaminess'' of the fromage frais, to make a dessert which tastes as if it were really rich - you will need only a small helping! Converted by MM_Buster v2.0l.
