Marinated zucchini salad

Ingredients

Quantity Ingredient
6 smalls Zucchini -- thinly sliced
½ cup Chopped green pepper
½ cup Diced celery
½ cup Diced onion
1 Jar pimiento -- drained
cup Vinegar
cup Vegetable oil
½ cup Sugar
3 tablespoons White wine vinegar
½ teaspoon Salt
½ teaspoon Pepper

Directions

Combine zucchini, green pepper, celery, onion and pimiento in a medium bowl; set aside. Combine remaining ingredients in a jar; cover tightly and shake vigorously. Pour marinade over vegetables; toss gently. Cover and chill 8 hours or overnight. Serve with a slotted spoon. Yield: 8 servings
