1 | quart | Demi-glace |
3 | tablespoons | Shallots; minced |
12 | Peppercorns; coarsely ground | |
3 | ounces | Marsala wine |
Directions
1. Combine the demi glace, shallots, & peppercorns in a sauce pan, simmer until the mixture thickens.
2. strain the sauce through cheesecloth and put sauce in a clean saucepan.
3. add wine & simmer, adjust seasonings with salt & pepper to taste.
