Mashed potatoes for the '90s (basic mix)

4 | cups | Diced red potatoes; skin left on |
1½ | Sticks Unsalted butter | |
¼ | cup | Heavy cream -; (to 1/2 cup) |
Dried potato flakes | ||
Salt and pepper; to taste |
Directions
Bring 4 cups of water to a boil, and add diced red potatoes. Boil for approximately 15 minutes, until tender. Drain. In a mixing bowl, mix potatoes and butter with a hand mixer, and gradually add the cream until the desired consistency is reached. Add more cream to thin, and add more potato flakes to thicken. Salt and pepper to taste.
