Michiko's rice and chicken

Ingredients

Quantity Ingredient
2 Chicken breasts; deboned and boiled, chopped small
1 pack Shitaki mushrooms; soaked in warm water for about 30 minutes, de-stemmed and sliced
3 tablespoons Mirin sweet seasoning
3 tablespoons Sugar
Soy sauce
4 cups Short grained rice; washed
¼ cup Diced or sliced (very small) carrots or green beans (up to 1/2)

Directions

Mix sugar and Mirin, set aside. In rice cooker, have rice with water to proper line for 4 cups. Pour Mirin/ sugar mixture on top of rice. Pour soy sauce, enough to make it light brown. Gently place chicken, sliced shitake mushrooms, carrots or green beans on top rice. Cook in rice steamer until done. Let stand in covered rice steamer an additional 30-45 minutes before opening, and mixing together. Eat. This is absolutely delicious. allot of times I leave out the meat and add another ½ again amount of Shitakes.
