Microwave kumquat jam

1 | pounds | Kumquats (about 3 1/2 cups) |
1½ | cup | Sugar |
Directions
1) Rinse kumquats and cut into ⅛" slices; discard seeds and end pieces.
Chop fruit very coarsly.
2) Mix fruit with sugar in a 2-½ to 3 quart nonmetal bowl.
3) Microwave, uncovered, on high until mixture begins to boil, about 6 minutes; stir down bubbles.
4) Continue to cook, stirring every 2 to 3 minutes, until fruit mixture is thick enough to spread, about 10 minutes. Jam will thicken slightly as it cools. Serve warm or cool; to store, cover and chill up to 2 months. Makes about 2 cups.
