Mixed bean vegetable soup

2 | cups | Mixed dried beans, washed and drained |
8 | cups | Water |
1 | Clove garlic, minced | |
1 | large | Onion, chopped |
2 | tablespoons | Lemon juice |
2 | tablespoons | Honey |
2 | Bay leaves | |
1 | can | (24-oz) vegetable or tomato juice |
1 | can | (16-oz) tomatoes, undrained |
2 | cups | Sliced carrots |
1½ | cup | Shredded cabbage |
1 | cup | Chopped celery |
¼ | cup | Chopped green bell pepper |
Beef bouillon to taste | ||
Salt and pepper |
Directions
(From Spiral Co-op Natural Foods, Hastings, MN) In large container, cover beans with 3 quarts water. Soak overnight (minimum 12 hours). Rinse and combine in large soup pot with 8 cups water, garlic, lemon juice, honey and bay leaves. Simmer, covered, for 2 hours.
Add remaining ingredients and simmer, covered, for ½ to 1 hour, depending on size of vegetables. Remove and discard bay leaves before serving.
Substitutions on vegetables is encouraged.
