Mixed up potatoes

6 | mediums | Potatoes; peeled (up to 8) |
¼ | cup | Butter or margarine |
1 | can | Cream of chicken soup |
1 | cup | Sour cream |
⅓ | cup | Onions; chopped |
2 | cups | Cheddar cheese; grated |
Directions
Boil the potatoes for 15 minutes. Drain and let cool slightly before grating into a bowl. While the potatoes are boiling, melt the butter in a 9x13 inch baking dish. Add the soup, sour cream, onion and 1 cup of grated cheese to the potatoes. Mix well then turn into the baking dish. Stir to mix the butter. Cover with the remaining cheese and bake 20-30 minutes at 350 degrees.
NOTES : Can be made into a main dish by adding 1½ - 2 cups of cooked chicken. 1 pkg. cooked chopped broccoli and 1 extra can cream of chicken soup. I do not grate potatoes when making main dish, but just slice them.
