Moroccan sweet & sour carrots

Ingredients

4 | mediums | Carrots |
¼ | cup | Onion, minced |
½ | teaspoon | Nutmeg |
6 | tablespoons | Olive oil |
2 | tablespoons | White vinegar |
½ | cup | Seedless raisins |
2 | tablespoons | Brown sugar |
Directions
Scrape the carrots & slice them into ¼" rounds. Heat oil & add carrots, onions & nutmeg. When onions are lightly browned, pour in the vinegar. Cook, covered, over low heat, until carrots are tender.
Meanwhile, soak the raisins in ½ c warm water. When carrots are done, drain raisins & dump them into the pot with the carrots along with the sugar. Stir gently until the raisins are heated through.
Serve steaming hot.
