My family oyster soup

Ingredients

Quantity Ingredient
¼ cup butter
3 tablespoons flour
½ cup shallots, chopped
36 eaches oysters, medium
2 cups oyster liquor
¼ cup shallot tops, finely choped
½ teaspoon thyme
1 each bay leaf
cup milk, warm
1 salt & pepper to taste
1 parsley, chop fine/to taste

Directions

Cook flour and butter until bubbly. Add white onions and fry until wilted.

Add oysters, liquid, green onions, thyme and bay leaf and cook until oysters curl at edges. Pour in warm milk and heat; do not boil. Salt and pepper, add parsley garnish. Source: New Orleans Times-Picayune 13 Apr 1975 Recipe date: 04/13/75
