| 2 | cups | Cooked rice |
| ½ | cup | Cooked potato, cubed |
| ½ | cup | Fried beancurd, cubed |
| ½ | Onion, sliced | |
| 1 | tablespoon | Dried shrimp, ground |
| ½ | tablespoon | Blachan |
| 1 | cup | Bean shoots |
| 1 | Spring onion, chopped | |
| A little shredded lettuce | ||
| 1 | tablespoon | Fried shallots |
Directions
Heat oil and lightly scramble egg, then add rice, potato, beancurd and onion.
Stir fry over high heat for a minute or two, then add shrimp and blachan. Keep stirring.
Toss in bean shoots and spring onion, and stir fry for a few minutes. Keep frying over high heat until rice feels dry but clingy.
Serve sprinkled with lettuce and shallots.
