1 teaspoon White pepper
1 teaspoon Black pepper
½ teaspoon Oregano
1 teaspoon Allspice
1 teaspoon Cayenne pepper
2 teaspoons Thyme leaves
¼ teaspoon Cloves
2 Bay leaves
6 Chicken bouillon cubes
½ cup Flour GUMBO:
¾ cup Vegetable oil
1 cup Chopped celery
1 cup Chopped onion
1 cup Chopped green pepper
1 pack Gumbo mix
10 cups Water
1 pounds Polish sausage, in 1/2\" coins
1 cup Crabmeat
1 cup Cooked shrimp ot cooked rice ot sauce, optional Sherry wine, optional File powder, optional Mix: Combine and store in an airtight container.

Directions

New Orleans Gumbo: Saute celery, onion and green pepper in oil 3-5 minutes. Add soup mix, cook 4-6 minutes, stirring constantly. add water and sausage, cook 30 additional minutes at slow boil. Add crab and shrimp and heat through. Serve over rice and pass hot sauce, sherry
