New red potato salad (gardenburger)

Ingredients

12 | Red new potatoes; cooked as noted | |
¼ | cup | Balsamic vinegar |
¼ | cup | Extra virgin olive oil |
2 | bunches | Green onions; thinly sliced, white and green parts of |
1 | tablespoon | Fresh dill; chopped |
2 | Dill pickles; finely chopped | |
1 | teaspoon | Cracked black pepper |
Directions
Quarter the cooked, chilled new potatoes. Dress with vinegar, oil, herbs, onions, pickles and black pepper. Stir until completely mixed. Chill and serve.
Notes: Simmer the small potatoes whole until just barely tender; chill.
