Normandy chicken with apples

3 | cups | Apple cider (I used fresh from the cider mill) |
3 | Boxes (1.8 ounce) leek soup mix (like Knorr's) | |
2 | teaspoons | Dried thyme |
½ | teaspoon | Grated nutmeg |
1½ | pounds | Red new potatoes, peeled and diced (I didn't bother peeling though) |
4 | Celery ribs, thinly sliced | |
6 | Green onions, thinly sliced | |
3 | Apples, cored and cut into 16 wedges each | |
¾ | cup | Dried cranberries |
2 | pounds | Skinless, boneless chicken breast halves, halved crosswise |
Directions
In crockpot (at least 4-5 quart), combine the cider, dry soup mix, thyme and nutmeg. Stir to blend. Add potatoes, celery, green onions, apples and cranberries. Tuck the chicken down into the mixture. Cover and cook on low at least 8 hours, making sure the potatoes are tender.
