Nutty rhubarb and orange crumble

1 500 g pack frozen rhubarb
1 medium Orange; juice of
2 tablespoons Soft light brown sugar
250 grams Plain flour; (8oz)
75 grams Butter; (3oz)
25 grams Oatmeal; (1oz)
50 grams Soft light brown sugar; (2oz)
50 grams Flaked almonds; (20z)

Directions

CRUMBLE TOPPING

Preheat the oven to 190 C, 375 F, Gas Mark 5.

Place the rhubarb in a shallow ovenproof dish. Pour over the orange juice and sprinkle over the sugar.

Place the flour in a mixing bowl and rub in the butter. Stir in the oatmeal, brown sugar and flaked almonds.

Sprinkle the crumble mixture over the rhubarb and smooth level.

Bake in the preheated oven for 25-30 minutes until bubbling and the crumble is golden brown.

Notes Serve with custard, double cream or vanilla ice cream.
