Rhubarb and coriander crumble

450 | grams | Rhubarb - sliced; (1lb) |
Grated rind and juice of 1 orange | ||
75 | grams | Caster sugar; (3oz) |
75 | grams | Ground almonds; (3oz) |
50 | grams | Demerara sugar; (2oz) |
1 | tablespoon | Schwartz Ground Coriander |
Directions
Place the rhubarb, orange rind, juice and sugar in a large pan and simmer gently until tender. Meanwhile mix together the almonds, sugar and Ground Coriander. Place the rhubarb in 4 ramekin dishes and top with the almond mixture. Place the dishes under a hot grill until the topping is brown.
