Rhubarb and coriander crumble

Ingredients

Quantity Ingredient
450 grams Rhubarb - sliced; (1lb)
Grated rind and juice of 1 orange
75 grams Caster sugar; (3oz)
75 grams Ground almonds; (3oz)
50 grams Demerara sugar; (2oz)
1 tablespoon Schwartz Ground Coriander

Directions

Place the rhubarb, orange rind, juice and sugar in a large pan and simmer gently until tender. Meanwhile mix together the almonds, sugar and Ground Coriander. Place the rhubarb in 4 ramekin dishes and top with the almond mixture. Place the dishes under a hot grill until the topping is brown.
