Oatmeal raisin chews

2¼ | cup | Flour |
½ | teaspoon | Baking soda |
¼ | teaspoon | Salt |
1 | cup | Quick oats [not instant] |
1 | cup | Dark brown sugar; packed |
½ | cup | White sugar |
1 | cup | Butter |
2 | tablespoons | Honey |
2 | teaspoons | Vanilla |
2 | Eggs | |
1½ | cup | Raisins |
⅓ | cup | Walnuts; chopped [optional] |
Directions

Preheat oven to 300.
Combine flour, baking soda, salt and oats. Mix and set aside.
In second bowl, blend sugars. Add butter and mix to a grainy paste. Add honey, vanilla and eggs. Mix until light and fluffy.
Ad flour mixture, raisins, and walnuts, and blend at low speed until combined. DO NOT OVERMIX.
Drop by rounded tablespoons onto ungreased cookie sheet. Bake 22 to 24 minutes until cookies are light golden brown. Immediately transfer to a cool flat surface.
