Oatmeal raisin cookies (lf)

Ingredients

2 Egg whites
cup Light corn syrup
½ cup Sugar
1 teaspoon Vanilla
1 cup Flour
1 cup Multi-grain oatmeal
½ teaspoon Baking powder
½ teaspoon Baking soda
½ teaspoon Cinnamon
½ cup Raisins

Directions

Preheat oven to 375°F. Lightly spray cookie sheet with nonfat cooking spray. Blend egg whites, corn syrup, sugar and vanilla in a large bowl until smooth. Add flour, oatmeal, baking powder, baking soda and cinnamon.

Mix very well until all the dry ingredients are blended. Fold in the raisins. Drop the mixture, 1 to 2 inches apart, on the cookie sheet. Bake in preheated oven for 10 minutes, until bottom of cookies are lightly browned.

Serves 24, 84 calories per serving, Dietary Fiber 1 gram.
