Directions
Clean a large whole fish weighing 4-5 pounds. Season fish inside and out with salt and pepper. Sprinkle with lemon juice and dot with butter. Make a thick paste of flour and water. Cover entire fish with paste. Place on greased baking sheet. Bake in preheated very hot oven (450F) for 25-30 minutes. Remove from oven. Crack crust with mallet and remove fish carefully. Discard crust. Serve fish with lemon. Makes 6 servings.
