Open face turkey and chutney sandwiches

Ingredients

6 ounces Cream cheese; softened
3 tablespoons Mango chutney; chopped
½ teaspoon Curry powder; up to 1
4 Bays english muffins; split, lightly toasted
Baby lettuce leaves
½ pounds Sliced cooked turkey
8 slices Tomato; halved
8 slices English cucumber; halved

Directions

Combine cream cheese, chutney and curry powder; spread on toasted muffins.

Top with lettuce. Alternate slices of turkey, tomato and cucumber; garnish with a dollop of spread and cucumber.

Notes: Cream cheese punctuated with the mild heat of mango chutney and curry powder makes an intriguing partner for leftover turkey breast and cool tomato and cucumber slices. Serve these open-face sandwiches as a light end-of- Thanksgiving Day supper. S: 4 Bay's website -- www.bays.com
