Pan-fried ropa vieja

2 ceppa kin

Ingredients

Quantity Ingredient
½ pounds Flank steak;
Vegetable oil spray;
½ medium Onion; sliced
2 Carrots; thinly sliced (1 c)
2 cloves Garlic; crushed
½ medium Green pepper; sliced
1 can (4.5 oz) whole tomatoes;
1 teaspoon Dried oregano;
½ cup Sliced pimentos;
Salt & pepper to taste;

Directions

Cut meat into paper-thin slices. Spray a medium-size nonstick skillet with vegetable oil spray. Saute meat 2 minutes. Remove to a plate. In same pan, saute onions and carrots 5 minutes. Add garlic and green pepper and saute 5 more minutes. Add tomatoes and oregano.

Break up tomatoes with a spoon as they cook. Simmer 5 minutes.
