Ingredients

Quantity Ingredient
1 small Halloumi Cheese
1 Tomato; (sliced)
6 Olives; (pitted and chopped)
50 grams Capers
1 Shallot; (chopped)
1 Lime; (juice)
Olive Bread
1 tablespoon Vinegar
4 tablespoons Olive Oil; (to panfry halloumi)
2 teaspoons Mustard
8 Sprigs Chopped Basil
50 grams Mixed Salad Leaves

Directions

1. Mix the mustard, oil, vinegar, capers, olives and lime juice in a bowl and season. Next add the chopped basil.

2. Pan fry the bread in plenty of olive oil until golden. Drain on paper.

3. Fry the cheese on a high heat until golden.

4. Season the tomatoes and place on top of the bread with the chopped basil.

5. Place the cheese on the top and sprinkle over vinaigrette.

6. Serve with dressed salad leaves.
