1 | Large potato, cooked,peeled, and diced | |
1 | Medium sweet potato, cooked, peeled and diced | |
Chopped fresh cilantro for garnish |
Directions
Simmer the chiles, tomatoes and cumin for 15 minutes to form a thick sauce. Pour sauce over potatoes, toss to coat, garnish with cilantro, and serve.
