Pennsylvania dutch rice pudding

Ingredients

Quantity Ingredient
2 Eggs, separated
½ cup Sugar
2 cups Milk
1 cup Cooked rice
1 tablespoon Butter, melted
½ cup Raisins
2 tablespoons Confectioners sugar
teaspoon Ground nutmeg

Directions

Beat the egg yolks and mix in the sugar and milk. Stir into the rice.

Mix in butter and raisins. Pour into a buttered 1 quart baking dish.

Beat the egg whites until frothy, beat in the confectioners sugar and spread on top of the rice mixture. Sprinkle with nutmeg. Bake at 325oF about 30 minutes. Submitted By FRED NUNNAMAKER On 08-04-95
