Country rice pudding

Ingredients

Quantity Ingredient
2 cups Rice; cooked
cup Milk
teaspoon Salt
3 Eggs; beaten
1 teaspoon Vanilla
½ cup Brown sugar
1 teaspoon Butter
1 teaspoon Grated lemon rind & juice
½ cup Raisins
1 cup Crushed cookies

Directions

Preheat oven to 325F. In a bowl combine two cups cooked rice, milk, salt and remaining ingredients, except the cookies. Blend continously. This is more a folding action to avoid smashing the rice. Lightly oil the bottom of a baking dish. Pour in the mixture. Cover with crushed cookies. Bake for 45 minutes. Source: "All I ever wanted to know about cooking I learned from momma"-Carlo DiNapoli
