Rice-raisin pudding

Ingredients

Quantity Ingredient
cup Cooked rice
1 cup Chopped apples
¾ cup Skim milk
½ cup Raisins
½ cup Brown sugar
2 Eggs; beaten
1 teaspoon Vanilla

Directions

In a large bowl, mix all ingredients. Transfer to a 1½ quart casserole.

Bake at 325 degrees F for 1 hour or until firm and golden brown.

Serves 6. Per serving: 219 cal, 2g fat, 45mg sodium.
