Pesto and mozzarella tartlets

Ingredients

500 grams Fresh puff pastry; (1lb)
1 120 gram tub fresh pesto sauce
50 grams Sundried tomatoes; roughly chopped
; (2oz)
125 grams Mozzarella cheese; sliced (4oz)
6 Black olives; quartered
Freshly ground black pepper
Fresh basil leaves to garnish

Directions

Roll out the pastry large enough to cut out 4 x 15cm (6 inch) circles.

Place in the refrigerator to chill for 30 minutes.

Place the puff pastry circles on a baking tray and spread over the pesto sauce.

Arrange the remaining ingredients on each tartlet and place in a preheated oven 200øC/400øF/Gas Mark 6 for 15 minutes until well risen and golden brown.

Garnish with fresh basil leaves to serve.
