Pesto and mozzarella tartlets

1 | 120 gram tub fresh pesto sauce | |
50 | grams | Sundried tomatoes; roughly chopped |

125 | grams | Mozzarella cheese; sliced (4oz) |
6 | Black olives; quartered | |
Freshly ground black pepper | ||
Fresh basil leaves to garnish |
Directions
Roll out the pastry large enough to cut out 4 x 15cm (6 inch) circles.
Place in the refrigerator to chill for 30 minutes.
Place the puff pastry circles on a baking tray and spread over the pesto sauce.
Arrange the remaining ingredients on each tartlet and place in a preheated oven 200øC/400øF/Gas Mark 6 for 15 minutes until well risen and golden brown.
Garnish with fresh basil leaves to serve.
