Pesto focaccia - country living

Ingredients

Quantity Ingredient
Basic Pizza Dough
½ cup Tightly packed fresh basil leaves
2 tablespoons Coarsely chopped walnuts
1 Clove garlic
teaspoon Salt
cup Olive oil
2 teaspoons Cornmeal
1 ounce Goat cheese, coarsely crumbled
1 tablespoon Pine nuts

Directions

1. Prepare Basic Pizza Dough. Set aside to rise.

2. Meanwhile, in food processor, with chopping blade, pro- cess basil, walnuts, garlic, and salt until finely chopped. With processor blade whirling, slowly pour in oil until mixture has combined to make pesto.

3. Heat oven to 450'F. Shape pizza dough into 10-inch round. Lightly dust baking sheet with cornmeal. Place round 14 on baking sheet.

Brush top of round with some pesto. Sprinkle with goat cheese and pine nuts.

4. Bake focaccia on middle oven rack 10 to 12 minutes or until golden brown, Serve immediately. Dip focaccia in any remaining pesto, if desired. Country Living/October/90 Scanned & fixed by DP & GG
